This is quick, easy and a nice way to combine fruit with protein and carbohydrates. You can replace the apple or combine it, with finely chopped celery or grated carrot instead. It's nice to have during the breakfast or lunchbox for the kids too, plus you can have snacks on the go!
Its light, simple, and delicious. The combination with cheese and apple is also a great one!
6 slices of bread
A little unsalted butter (optional)
About 1 cup dessert apple
About 40g Cheddar or other well flavored hard cheese, grated
Preheat the grill to high. Toast the bread lightly and give it a thin slick of butter if you like.
Grate the apple into a bowl ( you don't need to peel it, but make sure there are no big skin in the mix:) Add cheese and toss to mix.
Pile the apple and cheese onto the toast. Put under the grill for a couple of minutes or until golden brown and bubbling.
Leave to cool a little before serving.
